Chilli chicken is one of God’s greatest gifts to mankind. He gave us higher cognition, empathy, imagination and chilli chicken. It’s a miracle in its own right. How many other dishes go with everything from rice to ice [not really I just wanted something that rhymed] and taste even better after a reheat. I don’t even need to say ‘I wish I could eat it every day’ because I do. It takes a bit more effort than most of the other recipes I’ve posted but it’s worth it.

Ingredients
- 2 Onions
- 2 Eggs
- Flour
- 2 Tomatoes
- Soy Sauce
- Thumb of Ginger
- 3 Cloves of Garlic
- 4 Chicken Pieces
- 4 Birds Eye Chillies
- Paprika
*Thighs and drumsticks please. If you are one of those heathens who prefers the breast I won’t judge you, but I may pity you.
Get Ready

- 2 Bowls
- Spatula
- Frying Pan
- Chopping Board
Method
- Cut up the chicken into large chunks. Liberally, coat all sides with salt, pepper and paprika. Really go for it. Its not that chicken doesn’t have flavour; it just needs a helping hand to reach its full potential.
- Crack the eggs into one bowl and whisk them then fill the other with flour. Add some oil to a pan on high heat.
- Take each chicken piece and drop it in the egg then the flower and finally the pan. Try to get a nice even coat on all of them. If there is any egg remaining you can the pour it over the pieces in the pan.
- Give the pieces 5 min on each side then lift them out of the pan and onto the plate. Yes, you’ve made fried chicken. Yes, this is two recipes in one. You’re day just keeps getting better and better.
- Chop up the ginger, tomatoes, onion, chillies and garlic and toss them in the pan. When the onion slices start looking transparent and tender add 3 tablespoons of sauce. Mix that all up then start adding the chicken pieces.
- Keep turning the chicken in the sauce as you let it cook for another 5min. Pick out a piece and check if its cooked all the way through by cutting it open. If its still pink and rubbery on the inside put it back and give it another five minutes.
- Scoop the chicken and its sauce onto a plate. Get some rice or pasta or whatever ready. Eat until you can’t physically stand then pack the rest into the fridge. Never look back.
