Chicken Chorizo Pasta

Chicken is great. Chorizo is fantastic. Chicken and chorizo in one dish couldn’t possibly fail you.

Now let me be honest. This will cost a bit more money and a lot more effort than most of the recipes I’ve posted. It almost doesn’t fit in here. It comes perilously close to toeing the boundary that separates us from people who actually know what they’re doing in the kitchen. People like your mum and Primetime Emmy Award winning chef Jamie Oliver. I am here to tell you that despite this, chicken and chorizo pasta is worthy of your love and sacrifice. Give it a chance.

 

Serves 2

 

Ingredients

  • 4 Big Handfuls of Pasta
  • 4 Tomatoes
  • 4 Cloves Garlic
  • 1 Bell Pepper
  • Crushed Chillies
  • Thumb of Ginger
  • 2 Onions
  • Soy Sauce
  • Chorizo Ring
  • 2 Chicken Thighs
  • Block of Parmesan
  • Paprika

 

Get Ready

  • Colander
  • Knife
  • Kettle
  • Chopping Board
  • Frying Pan
  • Grater
  • 2 Pots

 

Method

  1. Heat a splash of oil in the pot as you chop up the onions, garlic, ginger, tomatoes and pepper. Toss the veggies into the pot and let them cook until the onions are soft and the tomatoes have shed their water (approx. 4 minutes on high heat).
  2. Mix in 3 tablespoons of soy sauce, as much of the crushed chillies as you can handle and any other spices you feel like trying out. Turn down the heat after another 2 minutes.
  3. Prepare the pasta in the other pot as instructed on the packet. You might want to boil the water in a kettle to speed up the process. Strain it as soon as its done and set it aside.
  4. Heat a dash of oil in the frying pan as you chop up the chorizo (into coins) and the chicken (into strips). Rub paprika, salt and pepper into the meat. Fry the spiced chicken and chorizo till its cooked all the way through (approx. 4 minutes on each side).
  5. Turn up the heat on the sauce pot then mix in the meat and the pasta. Taste it and add spice as needed.
  6. Serve with a strong head of grated parmesan. You’re an adult now. You made a meal that people could conceivably pay good money for. As you gaze out the window you see a hopeful star clamber over the horizon that is your future.
