Roast Pork is a blessing. Very few recipes can match the sheer volume of meat you can prepare with so little effort. This is one of those get it ready, shove it in the oven, fuck off for an hour meals that make up 90% of my diet. I hope you learn to love it just as much as I do.
Serves 3
Ingredients
- 4kg Pork Loin or Pork Shoulder
- 2 Onions
- 4 Birds Eye Chillies
- 2 Red Bell Peppers
- 3 Garlic cloves
- Soy Sauce
- Half thumb of Ginger
- Oil
- Black pepper
- Paprika or any All Spice*
*not necessary but can add zing
Get Ready
- Frying Pan
- Big Knife
- Tablespoon
- Pot
- Chopping Board
- Glass or Ceramic Casserole Dish or a Roasting Pan
Method
- Place the pork on the chopping board, skin-side up. Get yourself a small sharp knife and make scores about 2cm apart through the skin into the fat, but not so deep that you cut into the meat.
- Rub salt right into all the scores you’ve just made. Brush any excess salt off the surface then turn it over. Season the underside of the meat with a few pinches of salt and black pepper.
- Heat a little oil in the frying pan over high heat then drop in the pork skin-side down. Leave it in there for 5min so that the crackling can get all crisp and brown. Turn the oven up to 220°C/425°F/gas 7 to get it ready.
- Lift the cut out of the pan and into the casserole dish or roasting pan skin-side up. You might want a bit of help from a friend [there will be no guide on treating 3rd degree burns].
- Chop up the onions, ginger, garlic, peppers and chillies. Check the links in the ingredients list of you need help with this. Heat up some oil in the pot.
- Dump the veggies in the pot and let that cook till the onions get tender and brown up a bit (2mins). Add 3 tablespoons of soy sauce and shake in a good amount of paprika, cajun and all spice if you have any. Mix that all up, give it a minute, then dump the sauce into the casserole dish or roasting pan, on and around the meat.
- Stick the dish in the oven and fuck off for an hour. When its done and you’re enjoying your newly birthed masterpiece think of me and how I changed your life.
